Instructions
Pour oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add onions. Sauté until golden brown, about 7 - 8 minutes. Add garlic. Cook for an additional 2 minutes.
Deglaze pan with red wine vinegar, reducing the liquid for about 1 minute.
Transfer contents to a food processor. Add the remaining ingredients and purée until smooth.
This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Warm before using.
