Ingredients

  • 2 tablespoons Olive Oil
  • 2 medium Onions thinly sliced
  • 2 large cloves Garlic peeled and sliced
  • 1/2 cup Red Wine Vinegar
  • 1 1/4 cups sliced Almonds
  • 1 can roasted Red Peppers drained
  • 6 sprigs fresh Mint leaves only
  • 4 sprigs fresh Parsley leaves only
  • 1 tablespoon Kosher Salt
  • 1 tablespoon Paprika
  • 1 cup Water​

Instructions

  • Pour oil into a medium skillet. Place over medium heat.
  • When oil is hot and shimmering, add onions. Sauté until golden brown, about 7 - 8 minutes. Add garlic. Cook for an additional 2 minutes.
  • Deglaze pan with red wine vinegar, reducing the liquid for about 1 minute.
  • Transfer contents to a food processor. Add the remaining ingredients and purée until smooth.​
  • This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Warm before using.
