Jollibee
Jollibee is a Filipino multinational chain of fast food restaurants, known as “the McDonald’s of the Philippines” where it handily beats out McDonald’s and Burger King in popularity and local market share.
As of April 2018, JFC had a total of about 1,200 Jollibee outlets worldwide, with shops in Southeast Asia, the Middle East, East Asia (Hong Kong, Macau), North America (US and Canada) and Europe (Italy and the UK).
Jollibee Chickenjoy
The Chickenjoy is a key part of Jollibee’s breaded crispy chicken meal.
It is cited in 2019 as the bestseller of the fast food brand in “every market in the world” according to Dennis Flores, the head and President of Jollibee Foods Corporation.
You can order the Chickenjoy in a number of different options from their menu. Examples include in by itself (solo), in a value meal, with buttered corn, or with jolly spaghetti.
The hand-breaded fried chicken is praised for being crispy and juicy and some say Chickenjoy is even better than Kentucky Fried Chicken.
Note – This is a 2 day recipe with the marinating time.
Jollibee Chickenjoy Recipe
Ingredients
- 2 fryer chickens cut up into 8 pieces
- Jollibee Chicken Marinade (Recipe and technique below)
- 6 cups Crisco Shortening
- 1 Egg well beaten
- 2 cups Milk
- 2 cups Flour
- 2 teaspoons freshly ground Black Pepper
- 3 tablespoons Salt
- 1 teaspoon MSG
- 1/8 teaspoon Garlic Powder
- 1 dash Paprika
- 1/2 teaspoon Five Spice Powder or Ngohiong Powder
Instructions
- Place shortening into the pressure cooker.
- Place over high heat and heat until the shortning reaches 400°F.
- In a small bowl, combine the egg and milk.
- In a separate bowl, combine flour, pepper, salt, MSG, garlic powder and paprika.
- Dip each piece of chicken into the milk mixture until fully moistened.
- Roll the moistened chicken in the flour mixture until well-coated.
- In groups of four or five, drop the covered chicken pieces into the shortening and lock the lid.
- When pressure start to builds up, cook for 10 minutes.
- Remove and place chicken on a paper towel or a rack to drain the excess oil.
- Enjoy.
To make ChickenJoy without a pressure cooker -
- Follow directions for marinating and breading the chicken.
- Heat oil in the deep fryer or deep frying pan to about 350°F.
- Carefully place breaded chicken pieces into the hot oil. Depending on the size of your fryer and the size of your chicken, you can put 4 to 5 pieces per batch. Don't overcrowd the fryer to avoid the fried chicken becoming soggy and loosing its crispiness.
- Cook for about 15 to 20 minutes until chicken is done and breading is browned and crispy.
- Remove and place chicken on a paper towel or a rack to drain the excess oil.
- Enjoy.

Jollibee Chicken Marinade Recipe and Technique
Ingredients
- 2 tablespoons Potassium Carbonate
- 2 tablespoons Kosher Salt
- 4 tablespoons MSG
- 1/8 teaspoon Garlic Powder
- 1/3 cup bottled Chicken Concentrate
- 5 cups Water
Instructions
- In a sealable container, combine all ingredients. Mix well.
- Add chicken, cover and place in the refrigerator for 24 hours.

After reading your recipe for Jollibee, I went ahead and ordered the potassium carbonate. On the bottle, it recommends that after brining, we should rinse off the potassium carbonate. In your marinade/recipe, you do not mention whether or not to rinse off the brine. Is potassium carbonate safe to eat?

According to the FDA, EFSA and JECFA, Yes. It has almost no side effects and its safety when used as a food additive has been approved by these and other authorities.
Potassium carbonate is a white salt. It is used as a raising agent or leavening agent in baking and an acidity regulator in winemaking and soda water. So chances are you have had it before – probably several times each day.
We are NOT doctors and this is NOT medical advise. We are simply relaying what the FDA, EFSA and JECFA has concluded.

Hello. Can I use vegetable oil instead of shortening? Will it be okay to replace the potassium carbonate with baking soda? Thanx for your response
