  1. After reading your recipe for Jollibee, I went ahead and ordered the potassium carbonate. On the bottle, it recommends that after brining, we should rinse off the potassium carbonate. In your marinade/recipe, you do not mention whether or not to rinse off the brine. Is potassium carbonate safe to eat?

    • According to the FDA, EFSA and JECFA, Yes. It has almost no side effects and its safety when used as a food additive has been approved by these and other authorities.

      Potassium carbonate is a white salt. It is used as a raising agent or leavening agent in baking and an acidity regulator in winemaking and soda water. So chances are you have had it before – probably several times each day.

    Hello. Can I use vegetable oil instead of shortening? Will it be okay to replace the potassium carbonate with baking soda? Thanx for your response
