Houston's Salad with Hot Bacon Dressing Recipe
Ingredients
Salad
- 6 cups mixed Greens such as Romaine, Spinach, Arugula
- 1 cup Cherry Tomatoes halved
- 1/2 cup Red Onion thinly sliced
- 1/2 cup Hard-Boiled Eggs chopped
- 1/2 cup crumbled Blue Cheese or shredded Sharp Cheddar Cheese
- 8 slices cooked Bacon crumbled
- 1/2 cup Croutons
Hot Bacon Dressing
- 6 slices Bacon diced
- 1/3 cup Red Wine Vinegar
- 3 tablespoons granulated Sugar
- 2 tablespoons Dijon Mustard
- 1/4 cup Water
- Salt and freshly ground Black Pepper to taste
Instructions
Dressing
- In a medium skillet, cook the diced bacon over medium heat until crispy.
- Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the skillet.
- Reduce heat to low.
- Add red wine vinegar, sugar, Dijon mustard and water to the skillet. Whisk to combine. Simmer for 1 - 2 minutes, stirring constantly, until mixture is well-blended and slightly thickened.
- Taste. Season with salt and black pepper, to taste. Set aside and keep warm.
Assemble Salad and Serve
- Arrange mixed greens on a large serving platter or individual plates.
- Top with cherry tomatoes, red onion slices, chopped eggs, crumbled bacon and cheese.
- Scatter croutons on top.
- Drizzle warm bacon dressing over the salad just before serving.
