Ingredients

Salad

  • 6 cups mixed Greens such as Romaine, Spinach, Arugula
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Red Onion thinly sliced
  • 1/2 cup Hard-Boiled Eggs chopped
  • 1/2 cup crumbled Blue Cheese or shredded Sharp Cheddar Cheese
  • 8 slices cooked Bacon crumbled
  • 1/2 cup Croutons

Hot Bacon Dressing

  • 6 slices Bacon diced
  • 1/3 cup Red Wine Vinegar
  • 3 tablespoons granulated Sugar
  • 2 tablespoons Dijon Mustard
  • 1/4 cup Water
  • Salt and freshly ground Black Pepper to taste

Instructions

Dressing

  • In a medium skillet, cook the diced bacon over medium heat until crispy.
  • Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the rendered fat in the skillet.
  • Reduce heat to low.
  • Add red wine vinegar, sugar, Dijon mustard and water to the skillet. Whisk to combine. Simmer for 1 - 2 minutes, stirring constantly, until mixture is well-blended and slightly thickened.
  • Taste. Season with salt and black pepper, to taste. Set aside and keep warm.

Assemble Salad and Serve

  • Arrange mixed greens on a large serving platter or individual plates.
  • Top with cherry tomatoes, red onion slices, chopped eggs, crumbled bacon and cheese.
  • Scatter croutons on top.
  • Drizzle warm bacon dressing over the salad just before serving.
