Gordon Biersch Chipotle Shrimp Flatbread Recipe
Ingredients
Chipotle Shrimp
- 1/2 pound large Shrimp peeled, deveined and tails removed
- 2 tablespoons Olive Oil
- 1 tablespoon Chipotle Chili Powder
- 1 teaspoon Smoked Paprika
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Cumin
- 1/2 teaspoon Salt
- Freshly squeezed Juice of 1 Lime
Chipotle Cream Sauce
- 1/4 cup Sour Cream
- 1 tablespoon Mayonnaise
- 1 teaspoon Chipotle Chili Powder
- 1 teaspoon freshly squeezed Lime Juice
- Salt to taste
Flatbread
- 2 large Flatbreads or Naan Breads
- 1 cup shredded Mozzarella Cheese
- 1/4 cup diced Red Onion
- 1/4 cup crumbled Queso Fresco or Feta Cheese
- 1/4 cup chopped fresh Cilantro
- Optional Toppings
- Sliced Avocado
- Chopped fresh Tomatoes
- Drizzle of Hot Sauce
Instructions
- In a bowl, add olive oil, 1 tablespoon chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, 1/2 teaspoon salt and juice of 1 lime. Mix well.
- Add shrimp and toss to coat evenly.
- Set aside and marinate for 15 - 20 minutes.
- Place a skillet over medium-high heat.
- Add the shrimp. Cook for 2 - 3 minutes on each side until opaque and cooked through. Remove from heat and set aside.
- In a small bowl, add sour cream, mayonnaise, 1 teaspoon chipotle chili powder, 1 teaspoon lime juice and a pinch of salt. Whisk to combine.
- Taste. Adjust seasoning to taste.
- Preheat your oven to 400°F (200°C).
- Place flatbreads or naan on a baking sheet.
- Spread a thin layer of mozzarella cheese over each flatbread.
- Evenly distribute cooked shrimp, red onion, and queso fresco or feta cheese on top of the cheese.
- Place flatbreads in the preheated. Bake 8 - 10 minutes, or until the cheese is melted and edges of the flatbread are slightly crisp. Remove from oven.
- Drizzle chipotle cream sauce over baked flatbreads.
- Sprinkle with fresh cilantro and optional toppings like avocado, tomatoes and/or hot sauce for added freshness and flavor.
- Slice into pieces and serve warm.
