Bob Evans
These family-style restaurants became known for their comforting, farm-fresh meals and welcoming atmosphere. Their menu featured hearty breakfasts and classic American comfort food, with signature dishes like “Bob Evans Sausage Gravy and Biscuits,” a beloved customer favorite.
In 2017, Bob Evans underwent a transformation when its restaurant division was sold to a private equity firm. This strategic shift allowed the company to refocus on its core packaged foods business, including its renowned sausage products, which remain available in supermarkets nationwide.
While the restaurant chain is no longer under the same ownership, it continues to operate as Bob Evans Restaurants, staying true to its legacy of delivering farm-fresh quality and homestyle flavors. Customers can still savor a variety of menu items that pay homage to the founder’s commitment to wholesome, satisfying meals. Bob Evans Restaurants remain a fixture in communities across the United States, serving as a reminder of their enduring dedication to delicious, comforting food.
Banana Bread
Banana Bread is a beloved quick bread that has its roots in early 20th-century America, rising in popularity during the Great Depression. It was a time when home cooks sought ways to avoid wasting food, particularly overripe bananas, which inspired the creation of this moist, flavorful loaf. The advent of commercially available baking soda and baking powder also contributed to the ease of making banana bread, as these leavening agents allowed the bread to rise without the need for yeast.
Banana bread surged in popularity during the 1930s and 1940s, largely due to its simple preparation and accessibility of ingredients, often featured in cookbooks like the famous Pillsbury Bake-Off competitions. Over the years, its versatility has led to countless variations, with ingredients like nuts, chocolate chips, or spices added for extra texture and flavor.
In terms of use, banana bread is incredibly versatile, enjoyed as a breakfast item, snack, or even dessert. It is commonly served at home, in cafes, and is a popular item at potlucks and gatherings. Its sweet, dense, and moist texture makes it universally appealing.
Banana bread’s enduring popularity lies in its comforting flavor, nostalgic appeal, and ease of customization, making it a staple in American kitchens. It’s often described as one of the ultimate comfort foods, offering a taste of home in every bite.

Bob Evans Banana Bread Recipe
Ingredients
- 4 over-ripe Bananas
- 1/4 cup Granulated Sugar
- 1/4 cup Vegetable Oil
- 1/4 cup Corn Syrup
- 1 Egg
- 1/2 teaspoon Vanilla Extract
- 1 cup All-Purpose Flour
- 3 tablespoon Corn Starch
- 2 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 1/4 cup Walnuts optional
For Cinnamon Swirl
- 1/4 cup Granulated Sugar
- 1 tablespoon ground Cinnamon
Instructions
- Preheat oven to 350°F.
- Line a loaf pan with parchment paper. Grease with melted butter or cooking spray.
- In a large bowl, mash bananas with a fork. (If your bananas are still firm, microwave them for 30-60 seconds to soften them.)
- When bananas are mashed, add 1/4 cup sugar, vegetable oil, corn syrup, egg and vanilla extract. Mix well.
- In a medium bowl, add flour, corn starch, baking powder, salt and baking soda. Mix well with a whisk.
- Slowly mix flour mixture in with wet ingredients in the larger bowl until just combined.
- Fold in the walnuts. (Your mixture should look like a thick cake batter.)
- In a small bowl, add cinnamon swirl ingredients, 1/4 cup sugar and ground cinnamon. Mix well and set aside.
- Using a spatula, spread 1/3 of the batter in the bottom of the loaf tin.
- Then spread 1/2 of cinnamon sugar..
- Spread the next 1/3 of batter on top and add the remaining cinnamon sugar.
- Spread the last 1/3 of the batter on top.
- Create the swirl - Use a butter knife to cut the batter with a figure-eight motion.
- Place pan in preheated oven on the middle rack and bake for 40 - 50 minutes. Insert a toothpick in the center of the bread to check for doneness. When the toothpick comes out cleanly, the bread is fully baked.
- Tip bread out onto a wire rack to let cool for about 10 minutes before slicing.
