Ruby Tuesday Chicken and Mushroom Alfredo Recipe
Ingredients
- 8 ounces Fettuccine Pasta
- 2 boneless, skinless Chicken Breasts
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon Garlic Powder
- Salt and freshly ground Black Pepper to taste
- 2 tablespoons Olive Oil
- 2 tablespoons Butter
- 1 cup Baby Bella Mushrooms sliced
- 3 cloves Garlic minced
- 1 cup Heavy Cream
- 1 cup Whole Milk
- 1 cup freshly grated Parmesan Cheese
- 1/2 teaspoon ground Nutmeg
- 1/2 teaspoon Black Pepper to taste
- Salt to taste
- 2 tablespoons fresh Parsley chopped
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- Season chicken breasts with Italian seasoning, garlic powder, salt and pepper.
- Pour oil into a medium skillet. Place over medium heat.
- When oil is hot and shimmering, add chicken breasts. Cook 6 - 7 minutes per side until golden brown and cooked through. Remove to a paper towel-covered plate to drain. Let rest, then slice.
- In the same skillet, melt butter over medium heat.
- Add mushrooms. Sauté until tender, about 5 minutes.
- Stir in minced garlic. Cook for 30 seconds.
- Pour in heavy cream and milk. Bring to a gentle simmer.
- Gradually whisk in Parmesan, nutmeg and black pepper, stirring until smooth.
- Taste. Add salt and more pepper, if needed, to taste.
- Add drained fettuccine to the skillet, tossing to coat in the sauce.
- Add sliced chicken on top and sprinkle with fresh parsley.
- Plate the creamy pasta with chicken and enjoy a restaurant-quality meal at home.
