- 8 ounces Fettuccine Pasta
- 2 boneless, skinless Chicken Breasts
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon Garlic Powder
- Salt and freshly ground Black Pepper to taste
- 2 tablespoons Olive Oil
- 2 tablespoons Butter
- 1 cup Baby Bella Mushrooms sliced
- 3 cloves Garlic minced
- 1 cup Heavy Cream
- 1 cup Whole Milk
- 1 cup freshly grated Parmesan Cheese
- 1/2 teaspoon ground Nutmeg
- 1/2 teaspoon Black Pepper to taste
- Salt to taste
- 2 tablespoons fresh Parsley chopped
Prepare pasta according to package directions. Drain. Set aside.
Season chicken breasts with Italian seasoning, garlic powder, salt and pepper.
Pour oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add chicken breasts. Cook 6 - 7 minutes per side until golden brown and cooked through. Remove to a paper towel-covered plate to drain. Let rest, then slice.
In the same skillet, melt butter over medium heat.
Add mushrooms. Sauté until tender, about 5 minutes.
Stir in minced garlic. Cook for 30 seconds.
Pour in heavy cream and milk. Bring to a gentle simmer.
Gradually whisk in Parmesan, nutmeg and black pepper, stirring until smooth.
Taste. Add salt and more pepper, if needed, to taste.
Add drained fettuccine to the skillet, tossing to coat in the sauce.
Add sliced chicken on top and sprinkle with fresh parsley.
Plate the creamy pasta with chicken and enjoy a restaurant-quality meal at home.
