Princess Seafood Restaurant Rockfish Taco Recipe
Ingredients
- 1 pound Rockfish Fillets or any mild, White Fish like Cod or Tilapia
- 2 tablespoons Olive Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Smoked Paprika
- Salt and freshly ground Black Pepper to taste
- 1 tablespoon freshly ground Lime Juice
- 8 small Corn Tortillas or Flour Tortillas of choice
- 1/2 cup shredded Cabbage
- 1/4 cup Red Onion thinly sliced
- 1/2 cup fresh Cilantro chopped, to garnish
- 1/4 cup Sour Cream for drizzling
- 1/4 cup Salsa for drizzling
- 1/2 Avocado sliced, to garnish
- Lime Wedges to serve
Instructions
- Pat rockfish fillets dry with paper towels.
- Season both sides of fish with cumin, chili powder, garlic powder, smoked paprika, salt and black pepper.
- Drizzle olive oil over fillets and toss to coat evenly. Let the fish marinate for about 10 - 15 minutes.
- In a small bowl, toss the shredded cabbage with a pinch of salt and lime juice. Set aside.
- Pour oil into a medium skillet. Place over medium-high heat.
- When oil is hot and shimmering, add the rockfish fillets and cook for 3 - 4 minutes per side, or until the fish is cooked through and flakes easily with a fork.
- Remove from heat and use a fork to break the fish into bite-sized pieces.
- Warm tortillas in a dry skillet or microwave until soft and pliable.
- Place warmed tortillas flat on a work surface.
- Place a few pieces of the cooked fish on each tortilla.
- Top with shredded cabbage, red onion and a few cilantro leaves.
- Drizzle with sour cream and salsa.
- Garnish with avocado slices and lime wedges on the side.
- Serve tacos immediately, with extra lime wedges on the side for squeezing.
- Serving Tip: Serve with a side of Mexican rice, black beans, or a simple avocado salad for a complete meal.
