Yield: 8 Tacos
- 1 pound Rockfish Fillets or any mild, White Fish like Cod or Tilapia
- 2 tablespoons Olive Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Smoked Paprika
- Salt and freshly ground Black Pepper to taste
- 1 tablespoon freshly ground Lime Juice
- 8 small Corn Tortillas or Flour Tortillas of choice
- 1/2 cup shredded Cabbage
- 1/4 cup Red Onion thinly sliced
- 1/2 cup fresh Cilantro chopped, to garnish
- 1/4 cup Sour Cream for drizzling
- 1/4 cup Salsa for drizzling
- 1/2 Avocado sliced, to garnish
- Lime Wedges to serve
Pat rockfish fillets dry with paper towels.
Season both sides of fish with cumin, chili powder, garlic powder, smoked paprika, salt and black pepper.
Drizzle olive oil over fillets and toss to coat evenly. Let the fish marinate for about 10 - 15 minutes.
In a small bowl, toss the shredded cabbage with a pinch of salt and lime juice. Set aside.
Pour oil into a medium skillet. Place over medium-high heat.
When oil is hot and shimmering, add the rockfish fillets and cook for 3 - 4 minutes per side, or until the fish is cooked through and flakes easily with a fork.
Remove from heat and use a fork to break the fish into bite-sized pieces.
Warm tortillas in a dry skillet or microwave until soft and pliable.
Place warmed tortillas flat on a work surface.
Place a few pieces of the cooked fish on each tortilla.
Top with shredded cabbage, red onion and a few cilantro leaves.
Drizzle with sour cream and salsa.
Garnish with avocado slices and lime wedges on the side.
Serve tacos immediately, with extra lime wedges on the side for squeezing.
Serving Tip: Serve with a side of Mexican rice, black beans, or a simple avocado salad for a complete meal.
