Legal Sea Foods Crab Louie Salad Recipe
Ingredients
- 1/2 cup Mayonnaise
- 2 tablespoons Ketchup
- 1/4 teaspoon bottled Horseradish
- 1/8 teaspoon Dijon Mustard
- 1 tablespoon minced Onion
- 1 tablespoon finely chopped fresh Parsley
- One 10-ounce bag mixed Romaine Lettuce
- 1 pound fresh Crab Meat picked over for shells and cartilage
- Freshly squeezed Lemon Juice
- 1 Avocado
- 2 hard boiled Eggs peeled and sliced
Instructions
- To a medium bowl, add mayonnaise, ketchup, horseradish, mustard, onion and parsley. Mix well. Set aside and for about 20 minutes to let the flavors meld.
- On a circular platter, arrange the greens in a circle around the edge, leaving the center open.
- Place the crab meat in the center.
- Drizzle the mayonnaise sauce over the crab meat.
- Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
- Pull the two halves of the avocado apart and remove the pit with a spoon.
- Use the spoon to scoop the avocado out of the skin.
- Slice avocado meat and squeeze lemon juice, to taste, over the avocado slice
- Place slices garnish along with the hard boiled eggs.
- Enjoy immediately. (If preparing more than 20 minutes in advance, prepare the avocado just before serving or leave out completely, so that it doesn't turn brown and ruin your salad.)
