Coastal Cravings: The Bold Taste of the Gulf
What do mesquite brisket, crawfish étouffée and shrimp po’boys have in common? They’re all part of the flavorful quilt that is Gulf Coast cuisine – stretching across five states, countless cultures and one endless appetite for bold, briny, and deeply satisfying food. Here, the South meets the sea, and every dish is infused with spice, story, and sunshine. Come hungry – this coast always delivers.
Emerald Waters, Golden Grits: Florida Panhandle
Between Pensacola and Apalachicola, the Florida Panhandle celebrates shrimp, oysters, mullet, and stone-ground grits with equal affection. Think shrimp and cheese grits, smoked mullet dip, and raw Apalachicola oysters on crushed ice. It’s where Southern comfort goes coastal – and every dish tastes like a beach day well spent.
Smoked Mullet Dip: A Smoky Coastal Staple of Florida’s Forgotten Coast
On Florida’s Panhandle Gulf Coast, particularly from Pensacola to Apalachicola, Smoked Mullet Dip is more than just a snack – it’s a rite of passage. Made from mullet caught just offshore, smoked low and slow over hardwood, then blended with creamy ingredients and bold seasoning, this humble dip reflects the region’s deep fishing traditions and flavor-forward approach to seafood.
The dip likely originated from fish camps and home smokers, where leftover mullet—after being enjoyed fresh or smoked whole – was flaked into spreads. Today, it’s a barroom and seafood shack essential, often found served with saltines or celery sticks, and cold beer on the side.
You’ll find excellent versions at Peg Leg Pete’s in Pensacola, Hunt’s Oyster Bar in Panama City, and Up the Creek Raw Bar in Apalachicola. Some are chunkier, some creamier, some extra-spicy, but all showcase the bold, smoky depth of mullet, a fish once overlooked but now celebrated for its flavor and sustainability.
The dip usually starts with flaked smoked mullet, blended into a base of cream cheese and mayo, then brightened with lemon, punched up with horseradish and hot sauce, and dusted with Old Bay or paprika. The flavor is smoky, tangy, and addictively salty – perfect on crackers, crudités, or spooned onto a seafood platter.
Often served at fish boils, family gatherings, and beach bars, Smoked Mullet Dip is both nostalgic and practical—a dish that honors the entire fish and delivers coastal flavor in every bite. It’s simple, soulful, and as local as a tide chart. On Florida’s Gulf, it’s not just a dip. It’s a destination.
