Disney's Polynesian Resort's Kona Cafe Hawaiian Pasta Salad Recipe
Ingredients
- One 16-ounce box Elbow Macaroni
- 1/4 cup Apple Cider Vinegar
- 2 1/2 cups Hellmann’s Mayonnaise or other Mayo of choice
- 1/2 cup Whole Milk
- 1 tablespoon Brown Sugar
- 2 medium Carrots peeled and finely shredded
- 1/4 cup Sweet Onion (Vidalia or Maui) finely grated
- Salt and freshly ground Black Pepper to taste
Instructions
- Prepare pasta according to package directions. Drain thoroughly and return to pot.
- While pasta is still warm, gently stir in apple cider vinegar. Cover and let sit for 10 minutes to allow noodles to absorb flavor.
- In a mixing bowl, whisk together mayonnaise, whole milk and brown sugar until smooth. Add to warm noodles. Stir gently to coat.
- Fold in shredded carrots and grated onion until evenly combined.
- Taste. Season generously with salt and freshly ground black pepper.
- Cover and refrigerate at least 4 hours, to chill, or overnight for best flavor.
