- One 16-ounce box Elbow Macaroni
- 1/4 cup Apple Cider Vinegar
- 2 1/2 cups Hellmann’s Mayonnaise or other Mayo of choice
- 1/2 cup Whole Milk
- 1 tablespoon Brown Sugar
- 2 medium Carrots peeled and finely shredded
- 1/4 cup Sweet Onion (Vidalia or Maui) finely grated
- Salt and freshly ground Black Pepper to taste
Prepare pasta according to package directions. Drain thoroughly and return to pot.
While pasta is still warm, gently stir in apple cider vinegar. Cover and let sit for 10 minutes to allow noodles to absorb flavor.
In a mixing bowl, whisk together mayonnaise, whole milk and brown sugar until smooth. Add to warm noodles. Stir gently to coat.
Fold in shredded carrots and grated onion until evenly combined.
Taste. Season generously with salt and freshly ground black pepper.
Cover and refrigerate at least 4 hours, to chill, or overnight for best flavor.
