Dinosaur Bar-B-Que Corn Bread Recipe
Ingredients
- 1 cup Yellow Cornmeal
- 1 cup All-Purpose Flour
- 1/4 cup granulated Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1 cup Whole Milk
- 2 large Eggs
- 1/4 cup unsalted Butter melted
- 1/4 cup Vegetable Oil
- 1/4 cup Honey
- 1/2 cup shredded Cheddar Cheese
- 1/4 cup diced Jalapeños
Instructions
- Preheat oven to 400°F.
- Grease an 8 x 8-inch baking dish - or a cast-iron skillet, for a rustic touch.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt until well combined.
- In a separate bowl, whisk together milk, eggs, melted butter, vegetable oil and honey until smooth.
- Gradually add wet ingredients to dry ingredients, stirring gently until just combined. Avoid overmixing.
- Add cheese or jalapeños. Fold into mixture.
- Pour batter into prepared baking dish or skillet. Smooth top with a spatula for even baking.
- Place in the preheated oven. Bake for 20 - 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from oven and allow cornbread to cool slightly before slicing.
- Serve warm with butter or a drizzle of honey for added sweetness.
