Ingredients

  • 1 cup Yellow Cornmeal
  • 1 cup All-Purpose Flour
  • 1/4 cup granulated Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Whole Milk
  • 2 large Eggs
  • 1/4 cup unsalted Butter melted
  • 1/4 cup Vegetable Oil
  • 1/4 cup Honey
  • 1/2 cup shredded Cheddar Cheese
  • 1/4 cup diced Jalapeños

Instructions

  • Preheat oven to 400°F.
  • Grease an 8 x 8-inch baking dish - or a cast-iron skillet, for a rustic touch.
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt until well combined.
  • In a separate bowl, whisk together milk, eggs, melted butter, vegetable oil and honey until smooth.
  • Gradually add wet ingredients to dry ingredients, stirring gently until just combined. Avoid overmixing.
  • Add cheese or jalapeños. Fold into mixture.
  • Pour batter into prepared baking dish or skillet. Smooth top with a spatula for even baking.
  • Place in the preheated oven. Bake for 20 - 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Remove from oven and allow cornbread to cool slightly before slicing.
  • Serve warm with butter or a drizzle of honey for added sweetness.
