- 1 cup Yellow Cornmeal
- 1 cup All-Purpose Flour
- 1/4 cup granulated Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1 cup Whole Milk
- 2 large Eggs
- 1/4 cup unsalted Butter melted
- 1/4 cup Vegetable Oil
- 1/4 cup Honey
- 1/2 cup shredded Cheddar Cheese
- 1/4 cup diced Jalapeños
Preheat oven to 400°F.
Grease an 8 x 8-inch baking dish - or a cast-iron skillet, for a rustic touch.
In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt until well combined.
In a separate bowl, whisk together milk, eggs, melted butter, vegetable oil and honey until smooth.
Gradually add wet ingredients to dry ingredients, stirring gently until just combined. Avoid overmixing.
Add cheese or jalapeños. Fold into mixture.
Pour batter into prepared baking dish or skillet. Smooth top with a spatula for even baking.
Place in the preheated oven. Bake for 20 - 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from oven and allow cornbread to cool slightly before slicing.
Serve warm with butter or a drizzle of honey for added sweetness.
