Cheddar’s Santa Fe Spinach Dip
Cheddar's Scratch Kitchen's Santa Fe Spinach Dip Recipe
Ingredients
- 1 medium Onion chopped
- One 14 1/2-ounce can Diced Tomatoes with Mild Green Chilies drained
- 2 cloves Garlic minced
- One 8-ounce package Cream Cheese cubed
- 1 cup shredded White Cheddar Cheese
- 1 cup shredded part-skim Mozzarella Cheese
- 1 cup shredded Monterey Jack Cheese
- 1 cup Alfredo Sauce See below for some easy and delicious restaurant recipes for Alfredo sauce
- One 10-ounce package frozen leaf Spinach thawed and squeezed dry
- 1 tablespoon freshly squeezed Lime Juice
- 1/2 teaspoon Cajun Seasoning See below for some easy and delicious restaurant recipes for Cajun seasoning
- 2 tablespoons Sour Cream
- Tortilla Chips and/or Garlic Bread
Instructions
- In a large nonstick skillet coated with cooking spray, sauté onion until tender.
- Add tomatoes and garlic. Cook 2 minutes longer.
- Remove from the heat. Set aside.
- In a large saucepan, combine the cheeses and Alfredo sauce.
- Cook and stir over medium-low heat until cheese is melted, about 10 minutes.
- Add tomato mixture, spinach, lime juice and Cajun seasoning.
- Transfer to a greased 1-1/2-quart round baking dish.
- Bake, uncovered, at 350°F for 25 - 30 minutes or until bubbly.
- Dollop with sour cream.
- Serve with chips and/or garlic bread.
