Boston Market began as Boston Chicken in 1985 when Northeastern University students Steven Kolow and Arthur Cores opened their first rotisserie chicken shop in Newton, Massachusetts, rapidly filling seats with home-style sides like cornbread and mashed potatoes before rebranding as Boston Market in 1995 to reflect an expanded menu. Over the next decade, aggressive franchising ballooned the chain to more than 1,000 locations by the late 1990s, only for debt-fueled overexpansion to trigger a Chapter 11 bankruptcy in 1998. McDonald’s acquired Boston Market in 2000 primarily for its real estate portfolio, steering the brand through another chapter of growth and menu innovation before selling it to Sun Capital Partners in 2007 and later to Engage Brands LLC in 2020.
From its inception, Boston Market’s hallmark has been rotisserie-roasted chicken paired with classic Southern sides—creamed spinach, macaroni and cheese, mashed potatoes, and cornbread—that evoke comfort and nostalgia. In 1995, the chain broadened its offerings to include turkey, meatloaf, and ham, cementing its “home-style” credentials and inspiring offshoots like the Boston Carver sandwich line and, later, frozen entrees distributed nationally. Boston Market Cornbread Recipe
Ingredients
- 1 cup Yellow Cornmeal
- 1 cup All-Purpose Flour
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 2/3 cup granulated Sugar
- 1/2 cup 1 stick Unsalted Butter, melted and slightly cooled
- 2 large Eggs
- 1 cup Whole Milk
- 1/4 cup Sour Cream
- 1 tablespoon Honey
Instructions
- Preheat oven to 350°F.
- Grease an 8 x 8-inch baking dish or line with parchment paper.
- In a large bowl, whisk together cornmeal, flour, baking powder, salt and sugar.
- In a separate bowl, beat eggs.
- Then whisk in melted butter, milk, sour cream and honey.
- Pour wet ingredients into dry ingredients. Gently mix until just combined - do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 30 to 35 minutes, or until golden and a toothpick inserted into the center comes out clean.
- Cool slightly before cutting into squares.
- Serve warm with butter or a drizzle of honey.
