Meatball Subs
The Meatball Sub is the ultimate fusion of comfort and indulgence—a glorious marriage of Italian heritage and American ingenuity. Rooted in the culinary traditions of Italian immigrants, this sandwich likely emerged in the early 20th century in the bustling Italian-American neighborhoods of cities like New York and Philadelphia. At its core, the meatball sub is simple yet profoundly satisfying: tender, seasoned meatballs nestled in a toasted roll, smothered in rich marinara sauce, and crowned with a generous layer of melted cheese, often mozzarella or provolone.
While Italy boasts its own variations of meatballs, known as *polpette*, they are traditionally served on their own or with pasta rather than in a sandwich. The meatball sub, as we know it, is a distinctly American creation, born out of a love for bold flavors and hearty, handheld meals. Today, it’s a staple in pizzerias, delis, and sandwich shops nationwide, from neighborhood joints to big-name chains like Subway and Jersey Mike’s. Some of the best versions can be found in places like Mike’s Deli in the Bronx or the legendary Pat’s King of Steaks in Philadelphia, where they serve up meaty, sauce-drenched perfection.
The meatball sub shares its spirit with other legendary hot sandwiches—think Philly cheesesteaks, Italian beefs, and classic hoagies. But few match its oozy, messy, soul-warming appeal. Whether enjoyed as a late-night bite or a weekend indulgence, a great meatball sub is a reminder that sometimes, the simplest pleasures are the most unforgettable.

- Form mixture into 2-inch meatballs, pressing a cube of provolone into the center of each and sealing completely.
- Heat 1/2-inch olive oil in a large skillet over medium-high heat until shimmering.
- Add meatballs, fry and turn until browned on all sides, about 1 minute per side. Transfer to a paper towel-lined plate.
