  • 1 pound Ground Veal
  • 1 pound Ground Beef (or use 3 pounds Beef only)
  • 1/3 cup minced fresh Flat-Leaf Parsley plus extra for garnish
  • 3 Eggs lightly beaten
  • 3 cloves Garlic minced
  • 1 3/4 teaspoon Kosher Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • 1/3 pound Provolone Cheese cut into 1/2-inch cubes
  • Olive Oil for frying
  • 6 cups Marinara Sauce spiced with Crushed Red Pepper to taste

Sandwiches

  • Six 6-inch Sub Rolls
  • Sliced Provolone Cheese

Instructions

Meatballs

  • In a large mixing bowl, combine milk and bread crumbs. Let them sit for 5 minutes to absorb.
  • Add ground pork, veal, beef, parsley, eggs, garlic, salt and black pepper. Gently mix with hands until just combined.
  • Form mixture into 2-inch meatballs, pressing a cube of provolone into the center of each and sealing completely.
  • Heat 1/2-inch olive oil in a large skillet over medium-high heat until shimmering.
  • Add meatballs, fry and turn until browned on all sides, about 1 minute per side. Transfer to a paper towel-lined plate.
  • Discard excess oil from skillet.
  • Pour marinara sauce into the skillet. Bring to a simmer.
  • Add meatballs, cover, and reduce heat to medium-low. Simmer for 30 minutes. Uncover and cook for 10 minutes more to thicken.

Assemble Sandwiches

  • Preheat oven to 450°F.
  • Slice rolls lengthwise, keeping them connected.
  • Arrange meatballs in a single layer on a baking sheet. Top each with sliced provolone.
  • Place in preheated oven and bake until the cheese melts and bubbles, about 5 minutes.
  • Spoon meatballs into the toasted rolls.
  • Smother with sauce.
  • Garnish with extra parsley.
  • Serve hot.
