TGI Fridays Black Bean Dip Recipe
Ingredients
- 3 slices thick Bacon
- 1/2 Red Bell Pepper seeded and chopped fine
- 1/2 Vidalia Onion peeled and chopped fine
- One 16-ounce can Fat-Free Refried Beans
- 8 ounces Monterey Jack Cheese cubed or grated
- 3/4 pound Velveeta Cheese cubed
- 1 can Mexican Style Rotel with Cilantro
- One 16-ounce can Black Beans
Instructions
- Place a medium skillet over medium heat.
- Add bacon. Fry until crisp.
- then remove from grease. Remove bacon to a paper towel-covered plate to drain.
- Pour off about 1/3 of the bacon grease.
- Return skillet to heat. Add prepared pepper and onion. Sauté until onion is clear.
- Remove pepper and onions.
- Add refried beans to same skillet. Heat until easily stirred.
- Remove from heat and turn beans out into a large microwaveable bowl.
- Add prepared pepper and onion.
- Crumble or chop bacon finely. Add to bacon to bean mixture.
- Add Monterey Jack cheese, Velveeta cheese, Rotel and black beans. Stir to combine. (Up to this point can be done in advance for easy party or dinner prep. Cover and store in the refrigerator, until ready to use.)
- When ready to serve, place in the microwave, and heat on low, stirring and checking until the cheese has all melted
- Serve with white, blue or red corn tortilla chips
