The Flying Biscuit Café Piedmont Omelet Recipe
Ingredients
- 1/2 cup Chicken Sausage
- 2 slices Applewood Bacon
- 1/4 cup Onion finely chopped
- 4 large Eggs
- 1/4 teaspoon Salt
- 1/4 teaspoon freshly ground Black Pepper
- 1/2 cup Sharp Cheddar Cheese shredded
- 2 teaspoons fresh Basil finely chopped
- 2 teaspoons fresh Cilantro finely chopped
Instructions
- Place a skillet over medium heat, Add chicken sausage and cook, crumbling it as it cooks, until browned, about 5 - 6 minutes. Remove the sausage from the pan and set aside.
- In same skillet, cook applewood bacon until crispy.
- Once done, crumble bacon and set aside with the sausage.
- In same skillet, add chopped onion. Cook over medium heat until softened, about 2 - 3 minutes.
- In a bowl, whisk the eggs with salt and black pepper until smooth.
- Lightly coat a small non-stick skillet with cooking spray or a small amount of butter.
- Place over medium-low heat and heat until hot.
- Pour egg mixture into the skillet. Allow it to cook without stirring, tilting the skillet occasionally to let any uncooked eggs flow to the edges.
- Once the eggs are mostly set, sprinkle crumbled chicken sausage, crumbled bacon, sautéed onions and shredded cheddar cheese evenly over one half of the omelet.
- Carefully fold the omelet in half and cook for another 1-2 minutes until the cheese has melted and the omelet is fully cooked.
- Slide the omelet onto a plate.
- Garnish with fresh basil and a sprinkle of fresh cilantro).
- Serve hot with a side of creamy grits and a fluffy biscuit for a complete meal.
