Dinosaur Bar-B-Que Mutha Sauce is a Straight-From-the-Restaurant Recipe.
Dinosaur Bar-B-Que Mutha Sauce
Ingredients
- 1/4 cup Vegetable Oil
- 1 cup minced Onion
- 1/2 cup minced Green Pepper
- 1 Jalapeño Pepper seeded and minced
- 1 pinch Kosher Salt
- 1 pinch freshly ground Black Pepper to taste
- 2 tablespoons minced Garlic
- One 28-ounce can Tomato Sauce
- 2 cups Heinz Ketchup preferably, or other Ketchup, of choice
- 1 cup Water
- 3/4 cup Worcestershire Sauce
- 1/2 cup Cider Vinegar
- 1/4 cup freshly squeezed Lemon Juice
- 1/4 cup Molasses
- 1/4 cup Cayenne Pepper Sauce
- 1/4 cup Spicy Brown Mustard
- 3/4 cup Dark Brown Sugar packed
- 1 tablespoon Chili Powder
- 2 teaspoons fresh coarsely ground Black Pepper
- 1/2 teaspoon Ground Allspice
- 1 tablespoon Liquid Smoke optional
Instructions
- Pour the oil into a large saucepan. Place over medium-high heat.
- When oil is hot and shimmering, add onion, green pepper and jalapeño. Stir to mix.
- Add a pinch of salt and pepper. Cook until vegetables are soft and onions are golden.
- Add garlic. Cook for 1 minute more.
- Add all remaining ingredients, except Liquid Smoke.
- Bring to a boil. Then lower heat until sauce simmers. Simmer for 10 minutes.
- Turn off heat. Add Liquid Smoke.
- Store in a tightly sealed container, in the refrigerator, until ready to use.

Do I really need to use the jalapeno? Would it make a big difference if I omitted it? Thanx for your response

Thanks for the question. Since there are like 1,000 other ingredients, I think you will be safe leaving it out.
If it is the heat that is bothering you, though, there are heatless jalapenos on the market. They have all the taste and none of the burn.
