Bennigan’s Greek Chicken Salad Recipe
Ingredients
Chicken
- 2 boneless, skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon dried Oregano
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Paprika
- Salt and freshly ground black pepper to taste
Salad
- 6 cups Mixed Greens - Romaine, Spinach, Arugula, or others of choice
- 1 cup Cherry or Grape Tomatoes halved
- 1/2 Cucumber sliced into half-moons
- 1/4 Red Onion thinly sliced
- 1/2 cup Kalamata Olives pitted and halved
- 1/2 cup crumbled Feta Cheese
- 1/4 cup Pepperoncini sliced
Greek Dressing
- 1/4 cup Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1 teaspoon Dijon Mustard
- 1 teaspoon dried Oregano
- 1 clove Garlic minced
- Salt and freshly ground black pepper to taste
Instructions
Marinate and Cook Chicken
- Thoroughly coat chicken breasts with olive oil.
- Rub in oregano, garlic powder, paprika, salt and pepper. Set aside to marinate for at least 15 minutes or up to an hour.
- Preheat grill or grill pan over medium heat.
- Cook chicken 6 - 8 minutes per side, or until fully cooked (internal temperature of 165°F/74°C).
- Remove from grill and allow to rest for 5 minutes.
- Slice into strips. Set aside and keep warm
Prepare Salad
- In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, olives and pepperoncini. Toss gently to mix.
Make Dressing
- In a small bowl, add olive oil, red wine vinegar, Dijon mustard, oregano, minced garlic, salt and pepper, Whisk until emulsified.
- Taste and adjust seasoning, as needed.
Assemble Salad
- Divide salad mixture onto plates or into bowls.
- Top each serving with sliced chicken.
- Add a generous sprinkle of crumbled feta cheese.
- Drizzle dressing over the top just before serving.
