Ingredients
- 3 large Vine-Ripened Tomatoes seeded and finely diced
- 1/2 medium Red Onion finely diced
- 2 tablespoons Jalapeño finely minced (with seeds for heat, without for mild)
- 1/2 cup fresh Cilantro Leaves finely chopped
- 1/2 teaspoon Fresh Garlic grated
- 1 tablespoon freshly squeezed Lime Juice
- 1 tablespoon Olive Oil
- 1 teaspoon White Vinegar
- 3/4 teaspoon Kosher Salt to taste
- 1/4 teaspoon Black Pepper to taste
Instructions
- In a medium mixing bowl, add diced tomatoes, red onion and jalapeño. Gently fold together until evenly combined.
- Gently stir in chopped cilantro and freshly grated garlic, ensuring the aromatics are well distributed.
- Drizzle in lime juice, olive oil and vinegar, tossing lightly to coat the vegetables.
- Season with salt and black pepper. Taste and adjust if needed - the lime and jalapeño should sing.
- Cover and refrigerate for at least 6 hours, ideally overnight, to allow the flavors to meld and deepen.
- Serve chilled as a topping for grilled chicken, tacos, nachos or as a dip alongside warm tortilla chips.
