- 3 large Vine-Ripened Tomatoes seeded and finely diced
- 1/2 medium Red Onion finely diced
- 2 tablespoons Jalapeño finely minced (with seeds for heat, without for mild)
- 1/2 cup fresh Cilantro Leaves finely chopped
- 1/2 teaspoon Fresh Garlic grated
- 1 tablespoon freshly squeezed Lime Juice
- 1 tablespoon Olive Oil
- 1 teaspoon White Vinegar
- 3/4 teaspoon Kosher Salt to taste
- 1/4 teaspoon Black Pepper to taste
In a medium mixing bowl, add diced tomatoes, red onion and jalapeño. Gently fold together until evenly combined.
Gently stir in chopped cilantro and freshly grated garlic, ensuring the aromatics are well distributed.
Drizzle in lime juice, olive oil and vinegar, tossing lightly to coat the vegetables.
Season with salt and black pepper. Taste and adjust if needed - the lime and jalapeño should sing.
Cover and refrigerate for at least 6 hours, ideally overnight, to allow the flavors to meld and deepen.
