Salsarita’s Fresh Mexican Grill
Salsarita’s Fresh Mexican Grill is a fast-casual Tex-Mex restaurant chain founded in 2000 by Bruce Willette in Charlotte, North Carolina. The brand gained momentum after being acquired by Phil Friedman in 2011, who expanded its footprint and aimed to establish Salsarita’s as a “super regional” chain. Today, Salsarita’s operates over 80 locations across the United States, with a strong presence in the Southeast and Midwest, including several in Kentucky.
The menu at Salsarita’s centers around customizable Mexican-style dishes, allowing guests to build their own burritos, tacos, nachos, quesadillas, salads and the signature “Quesorito”—a burrito smothered in creamy queso. Protein options include grilled chicken, steak, ground beef, shredded pork, sautéed shrimp and fajita vegetables. Complementing these are seven house-made salsas prepared fresh daily, such as mild, medium, hot, pico de gallo, tomatillo salsa verde, pueblo corn salsa and creamy Cholula corn. Additional toppings like rice, beans, shredded lettuce, diced tomatoes, onions, cilantro, black olives, jalapeños, shredded cheese, sour cream and house-made guacamole provide endless customization possibilities.
Salsarita’s commitment to freshness and flavor has resonated with customers, earning it a loyal following. The brand has embraced technological advancements to enhance the customer experience, including online ordering, third-party delivery and loyalty programs. Many locations offer dine-in, take-out and drive-thru options, catering to various dining preferences.
In addition to individual meals, Salsarita’s offers catering services with options like Taco Bars, Fajita Bars, Nacho Bars and Fiesta Packs, making it a popular choice for events and gatherings.
With its focus on customizable, fresh Mexican cuisine and a customer-centric approach, Salsarita’s Fresh Mexican Grill continues to grow and delight diners across the country.
Wrapped in Flavor: The Story of the Burrito
The Burrito is a beloved culinary icon that traces its roots to Mexican cuisine, particularly the northern regions where wheat flour is more common than corn. The word “burrito,” meaning “little donkey” in Spanish, is thought to have originated in the early 20th century, possibly referencing the way the dish is wrapped like a pack on a donkey’s back. Though rolled tortillas with fillings have existed for centuries in various forms, the modern burrito as we know it—meat, beans, rice and condiments wrapped tightly in a flour tortilla—was popularized in Mexican-American communities, especially in California and the Southwest.
Preparing a burrito typically begins with a large flour tortilla warmed to pliability. The filling often starts with a base of seasoned meat such as carne asada, grilled chicken, carnitas, or barbacoa, combined with rice, beans (black or pinto), cheese and salsa. From there, additions like sour cream, guacamole, jalapeños, lettuce, or corn can tailor the burrito to each eater’s preference. Once filled, the tortilla is carefully rolled into a compact cylinder and sometimes grilled or pressed to crisp the exterior.
Regional variations abound: California burritos often include French fries; breakfast burritos pack in eggs, potatoes and sausage; and wet burritos are smothered in enchilada sauce and cheese. Burritos have become a global staple in the fast-casual dining world, thanks to chains like Chipotle, Qdoba and Salsarita’s, which offer build-your-own formats with fresh, customizable ingredients.
Whether found in a street cart in Tijuana or a trendy urban restaurant, the burrito remains a satisfying, handheld meal that perfectly balances portability, flavor and comfort—making it one of the most enduring and adaptable dishes in North America and beyond.
