Ruth's Chris Steak House Scallops in Lobster Sauce Recipe
Ingredients
Ruth's Chris Steak House Lobster Sauce
- 1 Lobster Tail (shell on), or 1/2 cup cooked Lobster Meat
- 2 tablespoons Unsalted Butter
- 2 cloves Garlic peeled and minced
- 1 Shallot peeled and finely diced
- 1/2 cup Dry White Wine
- 1 cup Heavy Cream
- 1/4 cup Seafood or Chicken Stock store bought or homemade, of choice
- 1 teaspoon Tomato Paste
- 1 teaspoon Paprika
- 1/4 teaspoon Cayenne Pepper
- Salt and freshly ground Black Pepper to taste
Scallops
- 1 pound Sea Scallops dry-packed, not wet
- Salt and freshly ground Black Pepper to taste
- 2 tablespoons Olive Oil
- 2 tablespoons Unsalted Butter
To Serve
- Fresh Herbs, like Parsley or Chives of choice, chopped, to garnish
Instructions
Ruth's Chris Steak House Lobster Sauce
- If using a lobster tail, steam or boil it until just cooked. Extract the meat and dice. Reserve the shells.
- Place butter into a medium skillet. Place over medium heat.
- When butter has melted and is hot (do not burn), add shells (if using) and cook for 2 - 3 minutes to release flavor.
- Stir in garlic and shallot. Cook until fragrant.
- Deglaze the pan with white wine, simmering until reduced by 1/2.
- Add cream, stock, tomato paste, paprika, cayenne and a pinch of salt and pepper, to taste. Simmer gently for 5 - 7 minutes.
- Strain out the shells (if used).
- Stir in the lobster meat. Reduce heat and keep warm.
Scallops
- Pat the scallops dry with paper towels.
- Season both sides with salt and pepper.
- Pour oil into a medium skillet. Place over heat.
- When oil is hot and shimmering, add scallops, leaving space between them.
- Sear scallops for 1 - 2 minutes per side until golden brown and just opaque in the center. Add butter to the skillet during the last minute for extra richness.
Assemble and Serve
- Spoon lobster sauce onto warm plates.
- Place scallops on top.
- Garnish with fresh herbs.
- Serve immediately, paired with crusty bread or creamy mashed potatoes to soak up the luxurious sauce.
