Gulf Coast Restaurant-Style Florida Stone Crab Claws Recipe
Ingredients
- 2 pounds Cooked Florida Stone Crab Claws cracked (Stone crab claws are already cooked when harvested, so they only need to be cracked and chilled—never reheated, or you risk toughening the meat.)
- Crushed Ice for serving
- Lemon Wedges for garnish
Gulf Coast Restaurant-Style Mustard Sauce
- 1 tablespoon Dry Mustard Powder
- 1 tablespoon Dijon Mustard
- 1/2 cup Mayonnaise
- 1 tablespoon Heavy Cream
- 1 teaspoon Lemon Juice
- Salt to taste
Instructions
- Place dry mustard, Dijon, mayonnaise, cream, lemon juice and a pinch of salt in a small bowl. Whisk until smooth. Place in a tightly sealed container and place in the refrigerator to chill for at least 20 minutes or until ready to serve.
- Arrange cracked crab claws over crushed ice.
- Serve chilled with mustard sauce and lemon wedges on the side.
