Chinese Restaurant-Style Chinese Fried Rice Recipe
Ingredients
- 2 tablespoons Vegetable Oil divided, for cooking
- 2 large Eggs beaten
- 1/2 cup Carrots finely diced
- 2 Scallions sliced (white and green parts separated)
- 4 cups cold cooked White Rice (preferably Jasmine, day-old)
- 1/2 cup frozen Peas
- 2 tablespoons Soy Sauce
- 1 teaspoon Sesame Oil
- 1/4 teaspoon White Pepper
Instructions
- Pour oil into a wok or large skillet. Place over medium heat.
- When oil is hot and shimmering, add beaten eggs. Scramble gently until just set. Remove from pan and set aside.
- Add remaining oil.
- Add carrots and white parts of scallions. Sauté for 2 minutes.
- Add cold rice, breaking up any clumps with a spatula. Stir-fry for 3 - 4 minutes until rice is hot and slightly toasted.
- Stir in peas.
- Add soy sauce, sesame oil and white pepper. Toss to combine.
- Return eggs to the pan and stir through.
- Sprinkle green scallion tops over the rice before serving.
