Ingredients

  • 2 tablespoons Vegetable Oil divided, for cooking
  • 2 large Eggs beaten
  • 1/2 cup Carrots finely diced
  • 2 Scallions sliced (white and green parts separated)
  • 4 cups cold cooked White Rice (preferably Jasmine, day-old)
  • 1/2 cup frozen Peas
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1/4 teaspoon White Pepper

Instructions

  • Pour oil into a wok or large skillet. Place over medium heat.
  • When oil is hot and shimmering, add beaten eggs. Scramble gently until just set. Remove from pan and set aside.
  • Add remaining oil.
  • Add carrots and white parts of scallions. Sauté for 2 minutes.
  • Add cold rice, breaking up any clumps with a spatula. Stir-fry for 3 - 4 minutes until rice is hot and slightly toasted.
  • Stir in peas.
  • Add soy sauce, sesame oil and white pepper. Toss to combine.
  • Return eggs to the pan and stir through.
  • Sprinkle green scallion tops over the rice before serving.
