- 2 tablespoons Vegetable Oil divided, for cooking
- 2 large Eggs beaten
- 1/2 cup Carrots finely diced
- 2 Scallions sliced (white and green parts separated)
- 4 cups cold cooked White Rice (preferably Jasmine, day-old)
- 1/2 cup frozen Peas
- 2 tablespoons Soy Sauce
- 1 teaspoon Sesame Oil
- 1/4 teaspoon White Pepper
Pour oil into a wok or large skillet. Place over medium heat.
When oil is hot and shimmering, add beaten eggs. Scramble gently until just set. Remove from pan and set aside.
Add remaining oil.
Add carrots and white parts of scallions. Sauté for 2 minutes.
Add cold rice, breaking up any clumps with a spatula. Stir-fry for 3 - 4 minutes until rice is hot and slightly toasted.
Stir in peas.
Add soy sauce, sesame oil and white pepper. Toss to combine.
Return eggs to the pan and stir through.
Sprinkle green scallion tops over the rice before serving.
