RECIPE NOTES
While Cheesecake Factory’s Chopped Salad involves some prep to dice the ingredients, it’s simple to put together. For convenience, you can grab pre-cooked chicken breast and bacon and some pre-chopped veggies from the store.
Unlike many other versions, this one includes Granny Smith apple pieces, adding a refreshing flavor and texture to the delicious balsamic-dressed salad.
Cheesecake Factory Chopped Salad Recipe
Ingredients
- Cheesecake Factory Balsamic Vinaigrette (See the Recipe Box below for this Recipe)
- 2 medium Avocados
- 12 cups packed moderately finely chopped Romaine Lettuce (use two 9-ounce bags cut-up romaine lettuce, chopped finer than in bag)
- 2 cups diced grilled Chicken Breasts
- 4 Roma Tomatoes seeded and finely diced
- 1 cup fresh cooked or frozen, thawed Corn Kernels
- 1/2 cup chopped crisp-cooked Bacon
- 3/4 cup Blue Cheese Crumbles
- 1 Granny Smith Apple skin left on, cored and chopped
Instructions
- Prepare Cheesecake Factory Balsamic Vinaigrette according to the recipe in the Recipe Box below. Set aside.
- Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
- Pull the two halves of the avocado apart and remove the pit with a spoon.
- Chop avocado meat into cubes.
- In a large bowl, combine lettuce, chicken, tomatoes, avocado, corn, bacon, blue cheese and apples. Gently toss until well mixed.
- Add Balsamic Vinaigrette to taste. Gently toss again until well mixed.

Cheesecake Factory Balsamic Vinaigrette
Ingredients
- 1/2 cup Olive Oil
- 3 tablespoons Balsamic Vinegar
- 1 generous teaspoon Dijon Mustard
- 1 tablespoon chopped Shallots
- 1 clove Garlic peeled and crushed
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon freshly ground Black Pepper
Instructions
- Add all ingredients to a small food processor. Process until well blended.
- (This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use.)
