Ingredients

  • Cheesecake Factory Balsamic Vinaigrette (See the Recipe Box below for this Recipe)
  • 2 medium Avocados
  • 12 cups packed moderately finely chopped Romaine Lettuce (use two 9-ounce bags cut-up romaine lettuce, chopped finer than in bag)
  • 2 cups diced grilled Chicken Breasts
  • 4 Roma Tomatoes seeded and finely diced
  • 1 cup fresh cooked or frozen, thawed Corn Kernels
  • 1/2 cup chopped crisp-cooked Bacon
  • 3/4 cup Blue Cheese Crumbles
  • 1 Granny Smith Apple skin left on, cored and chopped

Instructions

  • Prepare Cheesecake Factory Balsamic Vinaigrette according to the recipe in the Recipe Box below. Set aside.
  • Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
  • Pull the two halves of the avocado apart and remove the pit with a spoon.
  • Chop avocado meat into cubes.
  • In a large bowl, combine lettuce, chicken, tomatoes, avocado, corn, bacon, blue cheese and apples. Gently toss until well mixed.
  • Add Balsamic Vinaigrette to taste. Gently toss again until well mixed.
