Bahama Breeze Plantain Chips Recipe
Ingredients
- 2 medium Green Plantains firm and unripe
- 3 cups Vegetable Oil for frying
- Kosher Salt to taste
- 1/4 teaspoon Garlic Powder (optional)
- 1/4 teaspoon Smoked Paprika or Cayenne Pepper (optional)
Instructions
- Score the plantains lengthwise with a paring knife and peel off the skin.
- Using a mandoline or sharp vegetable slicer, slice plantains into very thin rounds or lengthwise strips.
- Place sliced plantains in a bowl of cold water and soak for 10 minutes.
- Drain and pat completely dry with a clean towel (moisture causes splatter).
- Heat oil in a deep fryer or heavy-bottomed pot to 350°F.
- Working in small batches, fry 5 - 6 chips at a time, do not crowd, until golden and crisp, about 1 1/2 to 2 minutes per batch.
- Remove chips with a slotted spoon and place on a paper towel–lined tray to drain.
- While still warm, season with kosher salt. For added flavor, lightly sprinkle with garlic powder or smoked paprika if desired.
- Serve immediately or cool completely and store in an airtight container for up to 3 days.
