Ingredients

  • 2 medium Green Plantains firm and unripe
  • 3 cups Vegetable Oil for frying
  • Kosher Salt to taste
  • 1/4 teaspoon Garlic Powder (optional)
  • 1/4 teaspoon Smoked Paprika or Cayenne Pepper (optional)

Instructions

  • Score the plantains lengthwise with a paring knife and peel off the skin.
  • Using a mandoline or sharp vegetable slicer, slice plantains into very thin rounds or lengthwise strips.
  • Place sliced plantains in a bowl of cold water and soak for 10 minutes.
  • Drain and pat completely dry with a clean towel (moisture causes splatter).
  • Heat oil in a deep fryer or heavy-bottomed pot to 350°F.
  • Working in small batches, fry 5 - 6 chips at a time, do not crowd, until golden and crisp, about 1 1/2 to 2 minutes per batch.
  • Remove chips with a slotted spoon and place on a paper towel–lined tray to drain.
  • While still warm, season with kosher salt. For added flavor, lightly sprinkle with garlic powder or smoked paprika if desired.
  • Serve immediately or cool completely and store in an airtight container for up to 3 days.
