Nordstrom’s Cafe Roma Tomato Soup Recipe
Ingredients
- 6 tablespoons Olive Oil
- 4 large Carrots sliced
- 1 large Onion sliced
- 1 tablespoon dry Basil Leaves
- Three 28 - 32-ounce cans whole peeled Roma Tomatoes
- 1 quart Chicken Broth
- 1 pint Heavy or Whipping Cream
- Salt and freshly ground Black Pepper to taste
Instructions
- Pour olive oil into a 6-quart saucepan.
- Place on stovetop over medium high heat. Heat until hot and shimmering.
- Add carrots, onion and basil. Sauté for 10 to 15 minutes, until vegetables are soft and fragrant.
- Add tomatoes and broth. Bring to a simmer, adjust heat and simmer for 20 minutes, stirring occasionally.
- Remove from heat and allow to cool slightly.
- Pour soup into a food processor, in batches, purée and until smooth. Return to saucepan.
- Place saucepan over low heat.
- Stir in cream. Stir to mix. Cook until just until heated through.
- Taste. Add salt and pepper, to taste, as needed.
- Serve hot.
