Bob Evans Cheddar Baked Potato Soup Recipe
Ingredients
- 1 can Campbell's Cheddar Cheese Soup
- 1 can Chicken Broth
- 4 cups whole Milk + 1 soup can full
- 1 pound grated Cheddar Cheese
- 2 tablespoons Butter
- 2 tablespoons Corn Starch
- 1/2 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper to taste
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Garlic Salt
- 7 medium Potatoes diced to 1-inch cubes and boiled until tender
- Chives sliced small, to top
- Bacon Bits or Crumbles to top
Instructions
- To a large pot, add soup, 1/2 can broth and 1 can milk. Mix well.
- Add cheese and 4 cups milk.
- Add in cornstarch to the remainder of the broth. Stir to dissolve. Add to soup.
- Add salt, pepper, onion powder, garlic salt and butter.
- Place over medium high heat and bring to a boil. Reduce heat. Simmer for 15 - 20 minutes.
- Add boiled potatoes. Continue to simmer for 15 minutes more.
- Top with chives and bacon bits.
- Serve hot.
