TGI Fridays Chicken and Sausage Penne Pasta Recipe
Ingredients
- 1/2 pound Hot Italian Sausage (about 3 links) removed from casing
- 1 pound boneless,skinless Chicken Breasts cut into 1-inch cubes
- 1 small Sweet Onion peeled and chopped or sliced
- 1 jar roasted Red Peppers chopped
- 12 - 16 ounces Marinara Sauce store bought or homemade, of choice
- One 12-ounce box Penne Pasta
- 1 bunch Fresh Parsley chopped roughly
- Freshly Grated Parmesan Cheese to serve
Instructions
- Prepare pasta according to package directions. Drain reserving 1/4 cup of the pasta liquid. Set both aside.
- Place sausage in a medium skillet. Break up a bit with a wooden spoon.
- Place skillet over medium heat. Cook, stirring and breaking up meat completely, until meat is browned.
- Drain off excess fat. Remove sausage and set aside.
- Without wiping out, place same skillet back over heat. Add chicken and cook, stirring, until browned.
- Add onion and roasted red peppers. Cook for about 2 minutes.
- Add prepared sausage, marinara sauce, reserved pasta water and parsley. Simmer until thickened.
- Add sauce to cooked pasta. Mix well.
- Serve hot with Parmesan cheese sprinkled over or on the side.
