Ingredients

  • 1/2 pound Hot Italian Sausage (about 3 links) removed from casing
  • 1 pound boneless,skinless Chicken Breasts cut into 1-inch cubes
  • 1 small Sweet Onion peeled and chopped or sliced
  • 1 jar roasted Red Peppers chopped
  • 12 - 16 ounces Marinara Sauce store bought or homemade, of choice
  • One 12-ounce box Penne Pasta
  • 1 bunch Fresh Parsley chopped roughly
  • Freshly Grated Parmesan Cheese to serve

Instructions

  • Prepare pasta according to package directions. Drain reserving 1/4 cup of the pasta liquid. Set both aside.
  • Place sausage in a medium skillet. Break up a bit with a wooden spoon.
  • Place skillet over medium heat. Cook, stirring and breaking up meat completely, until meat is browned.
  • Drain off excess fat. Remove sausage and set aside.
  • Without wiping out, place same skillet back over heat. Add chicken and cook, stirring, until browned.
  • Add onion and roasted red peppers. Cook for about 2 minutes.
  • Add prepared sausage, marinara sauce, reserved pasta water and parsley. Simmer until thickened.
  • Add sauce to cooked pasta. Mix well.
  • Serve hot with Parmesan cheese sprinkled over or on the side.
