sweetgreen
sweetgreen began in Washington, D.C. on August 1, 2007 when three recent Georgetown graduates opened their first small restaurant after deciding there ought to be a way to combine the convenience of fast food with fresher ingredients. The company has grown around salads, warm bowls and protein-forward plates prepared from scratch with an emphasis on seasonal produce and relationships with growers. sweetgreen still describes its mission as reimagining fast food around real ingredients and a more transparent food system.
Miso Salmon Meets sweetgreen’s Fall Favorite
Maple Glazed Salmon Bowl first appeared nationally in 2026 as part of sweetgreen’s Fall Harvest menu. Despite the name, the salmon itself is miso glazed, with maple syrup, soy sauce, white miso and rice vinegar supplying a savory-sweet glaze. The maple component shows up again on the roasted Brussels sprouts, whose caramelized sweetness plays against the salty salmon particularly well. Cool Napa cabbage slaw adds crunch and acidity, while garlic aioli makes the rice and roasted vegetables considerably less virtuous tasting than they look.
sweetgreen’s ingredient guide gives us unusually good clues for recreating each component, including maple and blackening spice on the Brussels, lime and mint in the slaw and maple, garlic and lemon in the aioli. Altogether it is less a salad than a proper salmon dinner arranged in a bowl, and the individual pieces also work well separately with grilled chicken, shrimp or other roasted vegetables.
