El Torito Shrimp Veracruz Recipe
A El Torito Copycat Recipe
El Torito Shrimp Veracruz Recipe
Ingredients
- 1 tablespoon Oil
- 1 small Onion chopped
- 3 Tomatoes peeled, chopped
- 1 1/2 teaspoons Capers
- 1 Bay Leaf
- 1/2 teaspoon Sugar
- 1/2 teaspoon Salt
- 1 large Green Pepper cored, seeded and cut into strips
- 2 tablespoons Oil
- 1 pound fresh Shrimp peeled and deveined, chilled
- 2 - 3 tablespoons freshly squeezed Lime Juice
- 1/3 cup minced fresh Cilantro
Instructions
- Add oil to medium pan. Place on stovetop over medium heat.
- When oil is hot and shimmering, add onion and sauté until tender, but not browned.
- Add tomatoes, capers, bay leaf, sugar and salt. Bring to boil.
- Reduce heat. Cover and simmer 15 minutes.
- Add green peppers. Cook 5 minutes longer.
- Heat 2 tablespoons oil in another skillet.
- Place over medium heat.
- When oil is hot and shimmering, add cleaned shrimp. Cook over medium heat until just pink. Do not over cook.
- Sprinkle lime juice over shrimp.
- Add prepared sauce. Heat 3 - 4 minutes longer.
- Top with cilantro and serve immediately.
