- 1 tablespoon Oil
- 1 small Onion chopped
- 3 Tomatoes peeled, chopped
- 1 1/2 teaspoons Capers
- 1 Bay Leaf
- 1/2 teaspoon Sugar
- 1/2 teaspoon Salt
- 1 large Green Pepper cored, seeded and cut into strips
- 2 tablespoons Oil
- 1 pound fresh Shrimp peeled and deveined, chilled
- 2 - 3 tablespoons freshly squeezed Lime Juice
- 1/3 cup minced fresh Cilantro
Add oil to medium pan. Place on stovetop over medium heat.
When oil is hot and shimmering, add onion and sauté until tender, but not browned.
Add tomatoes, capers, bay leaf, sugar and salt. Bring to boil.
Reduce heat. Cover and simmer 15 minutes.
Add green peppers. Cook 5 minutes longer.
Heat 2 tablespoons oil in another skillet.
Place over medium heat.
When oil is hot and shimmering, add cleaned shrimp. Cook over medium heat until just pink. Do not over cook.
Sprinkle lime juice over shrimp.
Add prepared sauce. Heat 3 - 4 minutes longer.
Top with cilantro and serve immediately.
