Cheesecake Factory Godiva Chocolate Cheesecake Recipe
Ingredients
Chocolate Cake
- 1 cup Godiva Melting Chocolate
- 1 teaspoon Vanilla
- 1 cup Butter
- 1 cup Sugar
- 4 Eggs separated
Cheesecake Filling
- 1/2 cup Godiva Melting Chocolate
- 1 pound Cream Cheese softened to room temperature
- 3 Eggs
- 1/2 cup Sugar
Mousse
- 1 1/4 cups Godiva Melting Chocolate
- 2 cups cold Heavy Cream
Ganache
- 1 cup Godiva Melting Chocolate
- 1 tablespoon Butter
- 1/2 cup Heavy Cream
- 1 or 2 tablespoons Sugar
- 1/2 teaspoon Vanilla
Toppings
- Whipped Cream
- 1 square of Godiva Chocolate for each slice
Instructions
- Preheat oven to 350°F.
Cake
- Grease a 9-inch cake pan.
- Melt 1 cup Godiva melting chocolate, 1 teaspoon Vanilla and 1 cup Butter for the flourless cake in a double boiler.
- Beat 4 egg yolks with 1/2 cup sugar.
- Fold the chocolate mixture into the egg yolks.
- Beat egg whites until frothy. Gradually add remaining 1/2 cup sugar. Beat to a stiff peak. Fold in the egg whites.
Filling
- Melt 1/2 cup Godiva melting chocolate in a double boiler.
- Beat cream cheese, 3 eggs, and 1/2 cup sugar together in a large bowl until smooth.
Bake Cake
- Pour the cake batter into the cake pan.
- Carefully top with cheesecake batter.
- Place in preheated oven. Bake for 40 - 50 minutes until firm.
- Remove from oven and chill for at least 4 hours.
Mousse
- Melt 1 cup Godiva melting chocolate in a double boiler. Remove from heat to cool.
- Beat heavy cream until somewhat thick.
- Beat in melted chocolate until soft peaks form.
- Layer mousse over the top of the cheesecake. Chill.
Ganache
- Place 1 cup Godiva melting chocolate and 1 tablespoon butter to a food processor.
- Place 1/2 cup heavy cream and 1 or 2 tablespoons sugar in a pot. Place over medium high heat and, stirring, bring to a boil.
- Remove from heat and add cream mixture to the food processor.
- Add vanilla. Process until smooth.
- Remove from processor to a bowl and refrigerate until the ganache is spreadable.
- Spread over the cake.
- Refrigerate until chilled through.
- Top with whipped cream and a chocolate square, and serve cold.
