Carrabba's Italian Grill Chicken Bryan Recipe
Ingredients
Basil Lemon Butter Sauce
- 8 tablespoons Butter divided
- 8 teaspoons chopped Onions
- 8 teaspoons chopped Garlic
- 1 cup Pinot Grigio White Wine
- 1/2 - 1 cup freshly squeezed Lemon Juice
- 20 pieces Sun-Dried Tomatoes
- 3 - 4 tablespoons freshly chopped Basil
Chicken
- 2 boneless skinless Chicken Breasts
- Extra Virgin Olive Oil as needed
- Italian Seasoning to taste
- Salt and freshly ground Black Pepper to taste
- 4 ounces Goat Cheese
Instructions
- Preheat oven to 350°F.
Basil Lemon Butter Sauce
- Heat 2 tablespoons butter in a medium pan.
- When hot, add onions. Sauté until onions are beginning to get soft.
- Add garlic and continue to sauté until onions are soft.
- Add in white wine and 1/2 cup lemon juice.
- Simmer, on medium low heat, for 10 minutes to reduce.
- Add 6 tablespoons butter, a tablespoon at a time, stirring and melting each, until the mixture emulsifies.
- Add tomatoes and basil.
- Increase heat to medium and heat until just hot. Do do overcook or sauce will break.
- Taste. Add additional lemon juice, if necessary.
Chicken
- Coat chicken on both sides with oil.
- Season both sides with, Italian seasoning, salt and pepper, to taste.
- Place chicken in preheated oven. Bake until cooked to a minimum internal temperature of 165°F.
- Remove chicken from oven.
- Turn oven to low.
- Place 1/2 of cheese on each chicken breast.
- Return to warm oven and allow cheese to melt a bit.
- When cheese has melted a little, place one chicken breast on a hot plate.
- Spoon sauce over.
- Repeat with other breast.
- Serve hot.
