An Einstein Bros. Bagels Copycat Recipe
Einstein Bros. Bagels Bistro Salad Recipe
Ingredients
- 1 head Romaine Lettuce torn into bite-sized pieces
- 2 cups Mesclun or Spring Lettuce Mix
- 1 cup Radicchio Leaves torn into bite-sized pieces
- Einstein Bros. Bagels Raspberry Dijon Salad Dressing (Recipe below)
- 1/2 cup Gorgonzola Cheese crumbled
- Sugared Walnuts (Recipe below)
Instructions
- Prepare Raspberry Dijon Salad Dressing and Sugared Walnuts according to recipes below.
- Wash greens and dry thoroughly.
- Toss greens together in a large salad bowl.
- Add 1 cup of prepared dressing until all salad greens are slightly wet. Fluff salad in center of bowl.
- Sprinkle Gorgonzola crumbles over salad.
- Sprinkle 1/4 cup walnuts over Gorgonzola.
- Serve immediately.
- Store leftover dressing and walnuts in tightly sealed containers, in the refrigerator.

Einstein Bros. Bagels Raspberry Dijon Salad Dressing Recipe
Ingredients
- 2 teaspoons Dijon Mustard
- 2 teaspoons minced Shallots
- 1/4 teaspoon minced Garlic
- 1/4 cup Sugar
- Freshly ground Black Pepper to taste
- 1/4 teaspoon Salt to taste
- 1/2 cup Olive Oil
- 1/4 cup Raspberry Vinegar
Instructions
- Place all ingredients, except the vinegar and olive oil, into a mixing bowl. Add vinegar. Whisk until sugar dissolves.
- While stirring with whisk, slowly drizzle oil into mixture. Stir until totally emulsified.
- Store in a tightly sealed container, in the refrigerator, until ready to serve.

Sugared Walnuts Recipe
Ingredients
- 2 cups Walnuts
- 4 tablespoons Peanut Oil
- 3/4 cup powdered Sugar
- 1 teaspoon Salt
- 1/4 teaspoon Cayenne Pepper
Instructions
- Preheat oven to 400°F.
- Blend together peanut oil, powdered sugar, salt and cayenne pepper. Add walnuts. Stir to coat well.
- Place walnuts in single layer on a baking sheet.
- Bake in preheated oven for 15 minutes. Stir once.
- Store in a tightly covered container, in the refrigerator, until ready to serve.

Thank you so much for this recipe- it’s spot on! Such a bummer that Einstein Bros no longer sells salad. This satisfied my craving and I got to be proud of myself for making it!
