Disney Epcot’s Canadian Cheddar Cheese Soup from Le Cellier Steakhouse
Cheddar Cheese Soup has been on on the menu at the Le Cellier Steakhouse in Canada, Epcot, Walt Disney World since 1995.
Disney Epcot's Canadian Cheddar Cheese Soup Recipe
Ingredients
- 1/2 pound Bacon cut in 1/2-inch pieces
- 1 medium Red Onion cut in 1/4-inch pieces
- 3 Celery Ribs cut in 1/4-inch pieces
- 1 cup All-Purpose Flour
- 3 cups Chicken Stock
- 4 cups Milk
- 1 pound grated White Cheddar
- 1 tablespoon Tabasco, or other Hot Sauce, of choice
- 1 tablespoon Worcestershire Sauce
- Coarse Salt and freshly ground Black Pepper to taste
- 1/2 cup Warm Beer
- Chopped Scallions or Chives for garnish
Instructions
- Place bacon in Dutch over over medium heat. Cook for 5 minutes, or until lightly browned, stirring.
- Add onion, celery and butter. Sauté 5 minutes.
- Add flour and stir 4 minutes on medium.
- Whisk in stock. Bring to a boil and boil 1 minute.
- Reduce heat to simmer. Cook 15 minutes, stirring.
- Add milk and simmer 15 minutes more. Do not boil after adding milk.
- Remove from heat and stir in cheese, Tabasco, Worcestershire sauce, salt and pepper, to taste, until soup is smooth.
- Stir in beer. If soup is too thick, thin with warm milk.
- Serve garnished with scallions or chives.

Is the amount of flour correct? One cup seems way too much.

Thank you for the Question. We just rechecked the original recipe, published by the Orlando Sentinel, and that is correct.
It does make the soup very thick – we will admit. Feel free to cut down on the flour a bit for a thinner soup.
Also, the flour and fat should always be equal. Here the flour is more than the butter, but the bacon should add enough fat to make it equal. If you are leaving out the bacon, or using turkey bacon or a meat-less substitute, be sure to reduce the flour.
