  • 8 Bamboo Skewers

Ingredients

  • 2 pounds boneless, skinless Chicken Breasts, cut into sixteen 2-ounce cubes
  • 1 1/2 tablespoons Kosher Salt
  • 1/3 cup freshly squeezed Lemon Juice
  • 3 tablespoons Red Wine
  • 1/3 cup Olive Oil
  • 1 tablespoon chopped fresh Thyme
  • 1/2 tablespoon chopped fresh Rosemary
  • 1/8 teaspoon ground Cumin
  • 16 thin slices Apple Wood-Smoked Bacon
  • 16 leaves fresh Sage
  • Freshly ground Black Pepper to taste

Instructions

  • Soak 8 bamboo skewers in water for at least 30 minutes.
  • Season chicken cubes with the salt.
  • Combine lemon juice and wine in a large mixing bowl.
  • Slowly whisk in the olive oil.
  • Mix in thyme, rosemary and cumin.
  • Place chicken bowl and allow to marinate for a few minutes.
  • Place a slice of bacon flat on a clean surface. Place a cube of chicken on top of slice. Place a sage leaf on top of the cube.
  • Wrap chicken in the bacon.
  • Sprinkle cracked pepper on bacon.
  • Repeat with all remaining chicken cubes.
  • Slide 2 bacon-wrapped cubes onto each skewer.
  • Place skewers on heated charcoal grill. Cook, turning often, until bacon is crisp and chicken is cooked to 165 degrees, about 10 minutes.
