- Sun-Dried Tomato Butter
- 1 4 oz. Stick Unsalted Butter, softened
- 1/3 cup Oil-Packed Sun-Dried Tomatoes finely chopped
- 1 teaspoon Tomato Paste
- 1 teaspoon Fresh Oregano coarsely chopped
- 1 tablespoon Fresh Basil coarsely chopped
- 2 Cloves Garlic peeled and minced
- 1 tablespoon Kosher Salt
- 1 tablespoon freshly ground Black Pepper
- Corn
- 6 Ears Sweet Corn
- Water for soaking
Place softened butter in a food processor or a mixer. Pulse a few times to ensure the butter is smooth and creamy.
Add finely chopped sun-dried tomatoes, tomato paste, coarsely chopped oregano, chopped basil, minced garlic, kosher salt and freshly ground black pepper to the butter. Mix until everything is well combined and smooth.
Set butter aside.
Pull back the husks from each ear of corn, removing all the silk, but don’t fully remove the husks.
Place corn into a deep bowl of water. Let soak for 30 minutes to help prevent burning on the grill.
After soaking, remove the corn from the water and blot it with a paper towel.
Rub prepared sun-dried tomato butter generously over each ear of corn.
Pull the husks back into their original position to cover the corn. Use kitchen twine to tie the husks at the top, keeping the butter sealed inside.
Preheat grill to medium-high heat.
Place prepared corn on the hot grill and cook, turning every 4 - 5 minutes, for about 20 minutes or until the corn is tender and has grill marks.
Continue turning to ensure even cooking and to avoid burning.
Remove corn from the grill and serve immediately, garnished with any remaining sun-dried tomato butter if desired.
