Ingredients

  • Two 4-ounce Salmon Filets
  • 10 Asparagus Spears
  • Oil as needed
  • Salt and freshly ground Black Pepper to taste
  • 5 ounces Field Greens
  • 2 Roma Tomatoes diced, divided
  • 4 ounces Balsamic Dressing store bought or homemade, of choice
  • 1 ounce Crispy Potato Sticks to serve
  • 4 tablespoons crumbled Feta Cheese to serve

Instructions

  • Drizzle salmon and asparagus spears with oil.
  • Season with salt and pepper.
  • Place on grill to cook. When done, remove and keep warm.
  • Place field greens in a medium mixing bowl, Add 1/2 of the tomatoes.
  • Pour in balsamic dressing. Toss to coat evenly.
  • Divide prepared greens onto two serving plates.
  • Top each with cooked salmon and asparagus spears.
  • Mound crispy potatoes on top. Sprinkle with feta cheese and the remaining tomatoes.
  • Serve immediately.
