- Two 4-ounce Salmon Filets
- 10 Asparagus Spears
- Oil as needed
- Salt and freshly ground Black Pepper to taste
- 5 ounces Field Greens
- 2 Roma Tomatoes diced, divided
- 4 ounces Balsamic Dressing store bought or homemade, of choice
- 1 ounce Crispy Potato Sticks to serve
- 4 tablespoons crumbled Feta Cheese to serve
Drizzle salmon and asparagus spears with oil.
Season with salt and pepper.
Place on grill to cook. When done, remove and keep warm.
Place field greens in a medium mixing bowl, Add 1/2 of the tomatoes.
Pour in balsamic dressing. Toss to coat evenly.
Divide prepared greens onto two serving plates.
Top each with cooked salmon and asparagus spears.
Mound crispy potatoes on top. Sprinkle with feta cheese and the remaining tomatoes.
Serve immediately.
